Marinate Chicken wings or thighs for a minimum of 2 hours

For the sauce

Pour the soy sauce, ketchup, garlic, caster sugar, gochujang, honey andSircha into a pan and gently boil until the honey and sugar has dissolved.

For the Firecracker Chicken

  • Place chicken in the flour coating and generously cover – tap off any excess flour.
  • Fry for approximately 3 minutes
  • Chop Spring Onions
  • Fry again for extra crispness
  • Add fried chicken to sauce and coat generously

To serve

Place on serving bowl or plate, sprinkle with sesame seeds and spring onions. Top with a wedge of lemon.

Serves 1

Chicken wings/thighs

Marinated for two hours in;

  • 1 teaspoon of soya sauce
  • 1 tsp cooking sake
  • 1 tsp mirin
  • 1tsp minced garlic
  • 1tsp minced ginger

For the firecracker sauce

Soy Sauce 170ml

Ketchup 200ml

Minced Garlic 70ml

Caster Sugar 250grams

Gochujang 150ml

Honey 150ml

Siracha 200ml

Chicken coating

Potato flour

Salt & Pepper

To fry - Rape Seed oil 50ml

Garnish

Lemon wedge, spring onion, sesame seeds
